Canning here in the US has regulations which is why we must water bath or pressure can. There's specific guidelines and times etc that foods must be canned at per the USDA. Some foods are low acid others are too high. It's to prevent botulism.

There are what are considered 'rebel canners' Adaline Zook is one of them. She cans how her mom was taught. So it's not approved by the US govt. However rebel Canning can be controversial depending who you ask.

So who can control me, as a housewife, how I can my food?

No one ever died from botulism in my family, at least as much as I know, for at least 100 or so years. However, we have never prepped for an apocalypse. Food was produced, rotated and eaten. Animals were slaughtered as necessary and the meat was a treasure and was eaten and not hoarded and later thrown on the compost pile. My ancestors had a true homestead. Not a faux YT/IG shite which we see all the time over YT.
Sorry but I still trust my grandmom's and mom's advice more than some wannabe YTuber or US regulations. Yeah, we Europeans are weird, no hard feelings ;)

    *grinnn*
We don't even have pressure canners here, they just don't exist...

I am not buying that BS for a minute.
Every time that thing opens her mouth, a lie comes out.
Can you tell I don't like her?

Does anyone else get the feeling that Grace's time is up soon, she keeps saying that she is old, wants to get a tattoo in memory of her. That poor dog is going to the fire pit soon with a bullet in her head...

    My thoughts exactly!

To all bakers in California: please stay safe!

Almost a year ago All By Myself started a topic for the bakers in the Bev-thread to show and talk about our own baking and cooking and how different is is from Bev's.

I was not not very skilled in baking (I've never really baked in my life, but I've learned a lot in this year), but there really are gems over there!

    Hi everybody!
Is it too early to say "Merry Christmas" to you all?

I haven't ben here for a while, so I had a lot to catch up on.
I want to thank RBF for her excellent recaps of all those idiot video's of our star light.
Is it me or is she getting more demented every time?
Bev the Dementor, hm, there is a thought... yes, we are bingewatching Harry Potter movies here.😎

Sometimes a video of hers pops up in my feed, what the heck is wrong with that thumbnail of her latest live?
    Eeewww!
    Is that sick or what?

I hope you are all doing well, that you are safe and warm and well fed.
Strange things to say actually, but these are strange times and all those things are not to be taken for granted anymore.

Welcome to the bakers that I don't know yet, I saw some new names.

We are hanging in there, the prices for gas are so high, that people have to choose between heating or eating.
The foodbanks are having a hard time feeding the amount of people that are coming in, lots of newcomers. (is that a word?)
Not the "usual" people anymore, but also families with both parents working.
    Ordinary, middle class families.
    The stories are heartbreaking.

I hope to be around here a bit more.
I have been crazy busy lately, we had bad news about my husbands health and have been visiting doctors and hospitals non stop, it feels.
I sure hope things will quiet down a bit.
See you when I see you!

    Hi everybody!
Thanks so much to you who reached out to me.
I haven't been here in a very long time, sorry, but, well, live happens...

We have not been very well physically, hubby is showing symptoms of Parkinsons and I am having heart problems.
Hubby has an appointment with a neurologist, but the waiting times are insane here!
The nearest hospital had a waiting list of 20(!) weeks, so we made an appointment with a hospital with a waiting list of 12 weeks, but that is a two hour drive.
Not fun with our gas prices...
I am seeing a cardiologist tomorrow, we'll see what he has to tell...

I feel like we live in a third world country here.
The prices of natural gas are actually unaffordable.
People have died in their homes because they were burning their barbecues with coales inside their living room.
People are trying to cook on candles.
    It's crazy!

The strange part is, I didn't even realize how idiotic the whole situation actually is, because we are of the mindset of finding solutions to our problems.
But is is actually ridiculous, we are using our central heating (natural gas) for one room, where we live during the day.
We set our thermostat for 18 degrees (64 F.), for one hour in the morning to warm up the place.
That is it, we wrap ourselves in blankets for the rest of the day.
I am finding ways to cook, using as little gas as I can, but electricity is also very, very expensive.
I didn't even realize how strange that sounds, until I wrote it down here.
Stocking up on food is one (very good) thing, but I never thought how much gas it takes to actually cook it.
    Another challenge! lol

Businesses are shutting down, because they can't afford the costs of fuel to produce their goods.
Bakeries shut down, they can't afford to bake breads anymore.
Some start a crowd funding to be able to keep their shops open for a few more months.
Food producing factories (like the ones that can food) are closing down.
And the winter hasn't even started!

But there are also heart warming initiatives: we see "share boxes" more and more, where people can leave what they can and take what they need.
One farmer has a shower with warm water, fueled by a methane installation he uses in his stables.
People can go there and take a nice long, shower for free.
He is thinking about building a couple more showers, because so many people come there for some wamth and a hot shower.
Beautiful initiatives, but very sad it has to go this way.

As for me: I am learning all new skills, very rapidly. lol
I already preserved food by freezing it or dehydrating, but now I've also learned how to can.
I started with a waterbath canner (actually it is a steam canner, which does not use so much gas to operate), and I just recently ordered a pressure canner.
But I still find it rather intimidating.
I can bake my own bread now, so that is a very good thing, with alle the bakeries shutting down left and right.

Our leaders keep saying that we won't have any shortages coming winter, food, gas, oil or otherwise, but it's when they say there is nothing to worry about, that's when I start preparing.
Just seems like a good idea.

Wood stoves are impossible to get now, as is firewood.
People are getting desperate and we all now what desperate people can do.
I am thinking about a very good security system around the house...

I've read the last few pages here, but it seems Bev is as stupid as always.
But I also have read one thing about blanching apples: I also had to blanche my apples, before making them into pie filling...
As per guidelines from the Natural Center for Home Food Preservation... lol

One thing we are not afraid of is the nuclear threat.
That seems to be a big thing in the USA.
    Not here so much.
I won't say that will never happen, but we just don't believe it.

    So, there you have it...
As for Bev: there are people with real worries and troubles...
    I can't stand that b*tch.

I hope you are all doing well.
    Stay warm and stay safe!

Whowhatwhen and Amazed1123 You are welcome!
We have a heat wave here and it's no fun to work outside in the garden.
I have been staying indoors as much as possible and have been binge watching these videos, I love them.
Just as SkeptcGram I am curious what they do with these hugh amounts of food, maybe they have some community, where they share food.

Thank you RBF, you nailed it!

I am glad to read you are doing well, do you still have PT?

I found a new to me channel, about a couple of Bev's and Howie's age, living in Azerbaijan, living a very simple country life.
She cooks the most wonderful dishes, without elektricity, outside on a open fire.
They are working hard in their garden.
There is no talking, no music, just the noises of what they are doing, birds, beautiful nature, farm animals and it is soooo relaxing.
I love it, it's all the things Bev's channels aren't.

Where can I find this thread?
I can't find anything anymore here...
Does someone have a link for me, please?

    Those were really strong women.
Bev does not meet that criterium by any stretch of the imagination...
