She would have to have another adult with her if she was planning on taking them at that time. I don't believe that she was. I wonder when the trip with the kids was supposed to be?

Regarding Christmas stockings is, do the Rosses-
A) scrape the Jennifer off Jen’s and puffy paint on ‘Tensleigh’? They are notorious for their cheapness (broken oven meet broom handle).
B) start over with an entire new set of stockings? (and a mantel extending contraption)
C) ask Jen to procure more stockings of choice since the Rosses are helpless to set up Christmas without Busy Bee.

Exactly. She was either always planning on doing the solo trip to WDW to run, or she was going to have to take someone with her to look after the kids.
I think we all know that she was never planning on taking them on the runDisney trip.

Or she expected her parents to fly in with them for a few days after the race and all fly home together? We know she wouldn’t be able to handle having the kids around on any level prior to running.

did she announce that she was canceling the trip with the kids while in Italy? 🧐
I just imagine her on face time seeing that everyone is having a wonderful time at the heart home. "they think they're going to have all sorts of fun without me??"
right after the call she cancels the kids Disney trip. the next day while talking to the kids she casually mentions that she canceled their trip. kids start hysterically crying. mama smiles and says "well I have to go. climbing another mountain today" and leaves the crying kids for Don to deal with
that's my theory and I'm sticking to it 😜

My guess is, Gravy would have found her a job as an administrative assistant or office manager through one of his old business contacts. She probably would be good at the work itself - and possibly would have been successful if she received no criticism or negative interactions with other people working there.
She probably would have married someone she met through a colleague or her parents or maybe even an old friend. People love to find 20-somethings a mate and Jen probably wouldn’t have been as obviously insufferable as she is now. I think she still would have kids, since it is a societal expectation, probably earlier than she did with Don, especially as it would have meant she could then stay home.
I think she’d be cold and demanding with her husband and kids, in a way that they’re all somewhat unsatisfied but not exactly miserable either.

From my own Disney research:
This race wasn’t announced until late June 2021, registration was July 13 and sold out in the first hour.
So this was a recent booking, not something she did with wishful thinking much earlier in the year.

My daughter used her highchair as a booster chair till she was tall enough for a regular chair. It was the Fisher Price wooden high chair with removable tray, so it was perfect for her to pull right up to the table. I had something similar when I was a child.

She just showed her kids on Halloween, but now she's going to pivot back and nostril flare on IG about creepy stalkers and harassers again. 
The mean Bakery is stalking her again! She has to go back to that narrative, as that's what suits her currently.

Jen's personalty is a case study in what happens when you are emotionally and mentally dishonest. She needs to seek professional counseling and get honest with herself, instead of talking out of both sides of her mouth. People would respect her more if she was just honest. But, she just can't be because she is so hell bent of projecting an image of perfection, or an image that she things will make people jealous, or who the hell knows what she's thinking?
Don and Jen would have eventually divorced, you can only take the digs for so long.
