    Not surprised to see Shecky upload a three week old video. For Valentine’s Day last month no less. How relevant to her stans is that??

    She mentioned the grift of the silicone mat but does NOT thank the stan at all. She could have just said thanks to the person that sent this you know who you are. She only mentions the grift in her PO Box. Again mentions the anniversary. So I’m sure that was a hint for more grift.

    And she is on a pantry challenge you know. But bought flowers and greenery for her table center. Aww that’s nice. A small arrangement for the bathroom. She’s the hostess with the mostess. Willing to cook food days ahead of serving. That was just gross. If her guests knew they were eating days old leftovers I wonder what they would have thought of her. Maybe that’s why she waited weeks to upload. Make sure no one needed medical attention or had food poisoning.

    “Pantry Chat about Freezer Meals Part 2

    6. After making a big batch of freezer meals do you always leave one out for dinner that night?

    Yes, definitely, whichever one sounds the best.

    7. What is something that doesn’t freeze well?

    Raw potatoes. Potatoes go funny colors if they are raw. Grey or black. If you cook them first they are fine tho.

    8. You have a great blog and it has a lot of recipes; does it have a lot of freezer recipes?

    It does. Josh is almost finished building a new website that will be a lot better too. If you google acre homestead freezer meals I always link the recipes so you can find a lot that way.

    9. Can you cook freezer meals from frozen or do you always have to defrost them?

    If something is in a casserole dish, it’s going to take 2+ hours if it’s not thawed. You absolutely can do it, you just have to think about starting it a little earlier in the day. Frozen marinated meats in a crockpot will also work.

    10. Now that you’re not working again, do you still do freezer meals?

    Yes, I am still busy and they have become a way of life. I don’t always devote an entire day to doing them but I always make a double batch of whatever I’m cooking and freeze one. It doesn’t take much more time to chop a couple of extra carrots or other ingredients.

    11. Any other thoughts?

    When you’re tired and pinched for time, if you have the option to serve a meal you’ve already made, that is an incredibly freeing thing. It really helps me get things done in big batches and portion them out. I would much rather make all the dishes dirty at once and clean them up all at once. It takes longer but then you’re done!

    Be Strategic about what you don’t make from scratch. No one can do everything. I don’t make cheese. I have all the equipment but it’s not something I can add to my life right now. Maybe in the future.

    Wow, that's a lot of seeds, in addition to the quantity of seed packets she already owned.

    No wonder she complains about the cost of eating out. She wants to divert those funds to adding to her seed collection!

    The most notable thing about that vid has to be the face on the thumbnail. She isn't as enthusiastic about anything else in her life.

    Her lips don’t just dry, but downright crusty. Is Washington State sold out of lip balm?

    She looked positively crazed setting up the seed room. She doesn’t seem to show that much excitement for her own family. Too bad Josh is still working out of the laundry room. He’ll just have to wait his turn.

    It had to be an old interview because she says she likes to spend the whole day in the kitchen. Only now she has a child. Oh wait. That’s right. She wants to spend her time in the kitchen.

    She needs to use a calculator or read and follow the recipes. Oh wait. That’s not going to happen either. Ha!

    So Bex sends out an email newsletter. I read it for entertainment and comedy.

    Anyway she did some interview and posted the questions and answers to part 1. I felt the sarcasm boiling up inside until my eyes rolled. Here it is for your comedy moment of the day.

    “Pantry Chat about Freezer Meals Part 1

    A while back I had the opportunity to collaborate with Carolyn from Homesteading Family and talk about my Freezer Meal Planning Process. The end of Winter and beginning of Spring is a great time to get those freezer meals made because then during the Summer when you have a long harvest day or you just want to enjoy the sunshine, you can rely on those meals!

    1.How did you get started doing Freezer Meals?

    Watching Youtube! I started getting into it years ago, but then I got into a bad habit of eating out a lot. When Covid hit, I lost my job and we had to get serious about budgeting and I also had the time and bandwidth to think about cooking so I got back into cooking everything from scratch at home. When I started working again, I no longer had all that time to devote to cooking so I started fiddling with the process of freezer meals. I love cooking fresh but having freezer meals for those days when I am tired or busy is amazing! A batch of 30 meals usually lasts me ~2 or 3 months.

    2. Do you only do dinners?

    I actually just did a big breakfast one and it was fantastic! We are already out of it and I wish I had doubled everything. I will definitely be doing more. I’ve never done lunch and I might in the future but we often eat leftovers for lunch since there are only 2 of us.

    4. What are your favorite things to make?

    Stuffed peppers. They are one of my favorites and they freeze perfectly! I have not been able to grow perfect bell peppers so I found a local farmer who grows these big beautiful peppers that are so good. I buy a giant amount each year, chop them up, and freeze them but this year I’m planning on making lots of variations of stuffed peppers to freeze instead.

    Curry is a good freezer meal because it’s not a casserole. You can do many things that aren’t casseroles or crockpot dumps like a really complex sauce that you can add to whatever veggies you have in your fridge or freezer.

    Chicken pot pie is my husband’s favorite dish. I add biscuits on top.

    I also like having marinated meat in the freezer so I can easily grill or bake it. I don’t use the crock pot a lot because I think you can get better flavor elsewhere.

    5. If you’re going to have a big freezer cooking day, can you walk us through the process? From picking the recipes to how you organize that?

    I think about what recipes I did last time and I try to not replicate that exactly.

    I also look at what we like to eat so I’m cooking food we will actually eat.

    I usually do two types of frozen meals: marinated meats and whole meals. That way if I have time to make a side, I will thaw some marinated meat but if I’m busier I will pick a meal where my vegetables, starch, and meat are all in one.

    I try to look at recipes that have a lot of similar ingredients so if I’m making shepherd’s pie I will make something like chicken pot pie so I can chop carrots for both of them. It doesn’t have to be exactly the same but if at least some ingredients are the same it lets you bulk chop and bulk buy.

    I like to print my recipes and then start a grocery list. I love grocery pick-up so I’ll put in my order the day before I do my big cooking day. After I pick it up I put everything on the counter that doesn’t need to be refrigerated so I don’t have to put it away and take it out again.

    Prep Work: Sometimes I cook the meat a day before because meat can take the longest. Grains or meats or beans I will often cook with the instant pot the day before. Or I’ll shred all the cheese.

    I get a good audiobook or YouTube video and just enjoy being in the kitchen. I really love that time when I know that’s what I’m doing and it doesn’t feel as much like a chore. After I’m done with the cooking I try to clean up too but that doesn’t always happen.

    She is definitely bending the timeline. Tomato vid is Feb 2 and 5 meals is Feb 1 as she stated. So she is editing and/uploading backwards and forwards. Time is fluid after all. Is this the third vid showing the valentine candy?

    * Adds her version of tomato juice to rice * It’s basically colored water.

    She failed on the brownie recipe. I hope these stans use her vid as comedy entertainment and not for instructional purposes.

    Just getting around to scanning through the tomato/barbecue sauce video. She is a study in hypocrisy. Finally, realizing that she has the quantity of spices most restaurants have on their prep shelves. Is she even aware how long does spices last to maintain their taste and aroma? She seems to think she is cooking for Duggar quantity type family. She likes shopping in bulk and it is very unlikely she will ever stop.

    She wants to talk about minimalism ? Ha. The only minimalism she has is the lack of decorating her own home. She is all about the bulk. No way does she care about minimalism and frugality.

    You knew she was making a running list to shop from her favorite online bulk places so that on March 1 at midnight she can hit the purchase button. She must be chomping at the bit!

    I truly think she has no idea what a pantry challenge is. She should’ve been using up lots of stuff that she had canned, frozen and purchased. Meanwhile, she hasn’t even finished processing garden items she harvested months ago. Granted she had a newborn. Would tomatoes that have been frozen solid even going to have any kind of taste processing with them this late? Oh right… that’s why she has to add so much salt.

    She tells her stans to use her fav canning book and proceeds not to follow the recipe. Just her usual hijinks. Isn’t canning a science to keep from botulism or other contamination ?

    She is too lazy to walk downstairs to get a pound of her 50-100 pounds of rice? Why not make her husband do it?

    Grift request for an electric food mill. Check!

    “No where in this recipe does it call for salt. Double and triple checked. Let me add some salt”

    This whole vid is basically a how not to do stuff.

    Let's just pretend (because that's all there is) that Jen finds someone to date. I know, big IF. How is she going to relate to that other person...what can she say?

    "I travel by myself. On a rare occasion I bring my children. I run Disney races and buy all the stuff. I go to theater events by myself or with my mother. I used to organize my house, but in this go round, I just didn't decorate, so there is little to organize."

    How is this going to appeal to anyone?

    What a quandry, she wants the positive feedback from viewers, but cannot take the negative criticism that come with publishing one's life on a public platform(s). Her only option is to go back to a quiet offline life. Doubtful that will happen.

    I don't care if someone has dyslexia or any other educational deficiency. Spellcheck is available on cell phones, tablets and computers with Internet access. Why she continues to mispell simple words before posting is simply laziness. And for her to create a post to highlight her misspellings is just an excuse for her laziness, being a victim, catering to her gift giving audience, and continuing to give herself grace. She should simply want more for her life.

    Bex crying poor mouth at the cost of eating outand other items, doesn't extend to the Valentine's candy supplies and landscaping. People spend their money on what they want to spend it on. She knows this, but uses these incidents as opportunities for grifting. She may think it makes her look humble to her gift giving fans, but to those that accept reality, it shows her grift, foolish spending, and the total opposite of homesteading.

    And what was with the mop? That was a total advertisement if ever I saw one!

    Given her out of order timeline, I'd say that she will probably upload the Valentine's candy making around Easter. That's not red, that's deep pink! It's an illusion don'tcha know!

    I think Bex's mother went to Florida with her family in January. Again given the floating timeline of videos, her mother prob isn't there. Or since Bex put her parents to work cleaning up the garden, maybe they didn't want to be around the second housepainting for fear they'd be on the job themselves.

    Interesting to surmise that Bex patrols the comments and deletes the negative ones. But on the paint drying vid, the first post has over 100 replies and some fairly negative ones at that. She must only gloss over the main list and not bother reading the reply threads.
